Christmas Pudding Cassata

Serves 10

Ingredients

1 litre vanilla ice cream, softened
½ cup cream
1/3 cup chocolate liqueur
½ teaspoon mixed spice
2 teaspoons Cadbury® Bournville® Cocoa
2 teaspoons hot water
¼ cup chopped glacé cherries
½ cup mixed dried fruits
2 tablespoons flaked almonds, toasted

Method

  1. Beat the ice cream until smooth.
  2. Add the cream, liqueur and mixed spice. Beat well.
  3. Divide the mixture in half. Dissolve the cocoa in the hot water and add to one half. Add the cherries, fruit and nuts to the other half.
  4. Pour the chocolate mixture into a pudding basin and allow to just begin to freeze.
  5. When it starts to thicken, spread the mixture around the sides and base of the basin to form a hollow in the centre.
  6. Pour the fruit mixture into the centre of the hollow. Spread the chocolate over to level the surface and freeze.
  7. Cut into slices and serve with warm chocolate sauce.
