Marvellously Moist Low Fat Muffins

Ingredients
3/4 cup plain flour
3/4 cup wholemeal flour
¼ cup Cadbury® Bournville® Cocoa
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
2 teaspoons mixed spice
3 tablespoons Splenda sugar substitute
1 cup finely grated carrot
440 g can crushed unsweetened pineapple, drained
½ cup skim yoghurt
2 egg whites
3 tablespoons light vegetable oil
Method
- Preheat the oven to 180°C. Mix the dry ingredients together in a bowl. Add the remaining ingredients and stir thoroughly.
- Spoon the batter into medium-sized, non-stick muffin trays.
- Bake for 12-15 minutes. Stand for 5 minutes before removing from the tray.
