Setting

Cadbury Cooking Chocolate will not reset hard after melting unless tempered (a process of raising and lowering the chocolate to exact temperatures which is usually too difficult to do at home). However Unichoc Compounded Chocolate will reset hard at room temperatures, eliminating the need to temper, and making this chocolate ideal for all decorative work. There are two stages in chocolate setting:

1. 'Touch Firm'
When the chocolate just begins to set and is no longer liquid, and it takes on a dull appearance. Suitable for making chocolate curls, cut-out shapes or when marking slices into slices for cutting.

2. 'Crack Hard'
When the chocolate is completely set and when cut or broken it 'cracks' or 'snaps'. It will retain its shape and when removed from baking paper will not leave a smudge or smear mark. Suitable for chocolate collars, shattered lace or piped shapes.
