Chocolate and Marshmallow Ice Cream Sandwiches

Delightfully cute little treats will put a silver lining on a dark cloudy day.

• 20 PASCALL Marshmallows

• 100g CADBURY Milk Chocolate Melts

• 24 CHIPS AHOY Cookies

• 12 coloured chocolate beanie lollies, or similar

• 12 small scoops of vanilla ice cream


USING scissors cut each marshmallow into 3. Pinch the edges together to form petals.
HEAT half the chocolate in a bowl over simmering water until just melted. Remove from the heat and stir in the remaining chocolate until smooth. Allow to cool and thicken a little.
SPREAD the flat side of 12 cookies with the melted chocolate and before the chocolate sets place 5 marshmallow petals onto each biscuit. Finish with a beanie in the centre of each to resemble a flower. Allow to set.
PLACE a scoop of ice cream onto the flat side of the remaining 12 cookies then sandwich together with decorated tops. Serve immediately.
NB: The decorated cookies can be prepared well in advance and stored in an airtight container.
