Rocky Road Ice Cream

This festive ice cream is fun and fabulous! Great for entertaining and not just for the kids either.

Ingredients

• 2 litres vanilla ice cream, softened slightly

• 2 cups PASCALL Marshmallows

• ½ cup red glacé cherries

• 100g CADBURY Dark or Milk Baking Chocolate, chopped

• ½ cup cream

Instructions

GENTLY fold together the ice cream, marshmallows, cherries and Chocolate Bits. Spoon into a 24cm × 13cm × 7cm plastic wrap lined loaf pan. Cover and freeze until firm.
MELT together the chocolate and cream in a glass bowl over simmering water, making sure the bowl doesn’t touch the water. Stir to combine.
TO serve, cut slices of ice cream and place on serving plates with a drizzle of chocolate sauce. Serve immediately.
